- 2 tablespoons boiling water
- 375 ml white sugar
- 150 g unsalted butter or margarine, at room temperature
- ⅓ cup + 2 teaspoons milk (whole or evaporated for creaminess)
- 1 teaspoon vanilla extract
Method
Step 1: Prepare the Biscuit Dough
- Sift Dry Ingredients: In a large mixing bowl, sift together the cake flour and salt. This aerates the flour and ensures even distribution of the salt.
- Melt the Mixture: In a medium saucepan over low heat, combine the butter, sugar, and golden syrup. Stir continuously until the sugar is fully dissolved and the mixture is smooth. Once melted, remove from heat and allow it to cool slightly.
- Add Flavor: Once the mixture has cooled to room temperature, stir in the vanilla essence to infuse flavor.
- Mix Bicarbonate: In a small bowl, dissolve the bicarbonate of soda in a few tablespoons of the very strong black coffee. This will help activate the soda and create a nice rise in your biscuits.
- Combine Ingredients: Add the dissolved bicarbonate mixture and the remaining coffee to the cooled butter and syrup mixture. Mix well until all ingredients are combined.

- Cook the Filling: Over medium heat, bring the mixture to a boil. Allow it to boil for about 8 minutes, stirring constantly. This helps to create a thick fudge consistency.
- Thickening Process: Remove the saucepan from the heat and let it cool slightly. Then, using a wooden spoon, beat the mixture until it thickens further. Once it has cooled to a spreadable consistency, stir in the vanilla extract.

- Sandwiching: Once the biscuits are completely cool, spread a generous amount of the coffee fudge filling on the bottom of one biscuit and gently press another biscuit on top to form a sandwich.
