Peppermint Crisp Tart

Ingredients
- 1 packet of tennis biscuits (or any plain coconut-flavored biscuits)
- 1 1/4 cups (300 ml) heavy cream (cold)
- 1 can (397 g) caramel treat (dulce de leche or caramel spread)
- 5.3 oz (150 g) peppermint crisp chocolate bars, grated or crushed
- 2 tablespoons of milk (optional, for softening biscuits)
Instructions
- Prepare the Dish
- Use a rectangular or square dish (approximately 9×9 inches) for layering.
- Arrange a single layer of tennis biscuits at the bottom of the dish, ensuring they cover the base completely. If needed, break some biscuits to fill in gaps.
- (Optional) If you prefer softer biscuits, lightly brush them with milk before layering.
- Whip the Cream
- In a chilled mixing bowl, whip the heavy cream until stiff peaks form. This step is key for achieving the tart’s light and creamy texture. Use a hand or stand mixer for the best results.
- Prepare the Cream Mixture
- Gently fold the caramel treat into the whipped cream. Mix until smooth and well-combined, but don’t overmix to avoid deflating the cream.
- Assemble the Tart
- Spread half of the caramel cream mixture over the first layer of biscuits. Smooth it out with a spatula.
- Grate or crush half of the peppermint crisp chocolate bars and sprinkle them evenly over the cream layer.
- Add another layer of biscuits on top of the chocolate, ensuring complete coverage.
- Repeat Layers
- Spread the remaining caramel cream mixture over the second biscuit layer.
- Finish by sprinkling the rest of the grated peppermint crisp chocolate on top for a decorative and flavorful finish.
- Chill the Tart
- Cover the dish with plastic wrap or a lid and refrigerate for at least 2 hours, but ideally overnight. This allows the biscuits to soften and the flavors to meld beautifully.
- Serve and Enjoy
- Slice the tart into squares or rectangles for serving.
