Ingredients

  • 125g butter (room temperature)
  • 1/2 cup brown sugar
  • 1/4 cup white granulated sugar
  • 1 egg
  • 1 cup all-purpose flour
  • 1 1/2 cups oatmeal (rolled oats work best)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cornstarch
  • 3/4 cup dried black raisins (seedless)
  • 1/2 cup walnuts (hand-crushed)
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the Oven
    • Preheat your oven to 175°C (350°F). Line a baking sheet with parchment paper.
  2. Mix the Dry Ingredients
    • In a small bowl, whisk together the flour, oats, cinnamon, baking soda, salt, and cornstarch. Set aside.
  3. Cream the Wet Ingredients
    • In a medium bowl, beat the butter, brown sugar, and white sugar with a hand mixer until light and creamy (about 2–3 minutes).
    • Add the egg and beat until fully incorporated.
  4. Combine the Mixtures
    • Gradually fold the dry ingredients into the wet mixture using a spatula. Mix until just combined.
  5. Add the Extras
    • Stir in the raisins, crushed walnuts, and dark chocolate chips. Use your hands if needed to evenly distribute the mix-ins.
  6. Shape the Cookies
    • Take tennis ball-sized portions of dough (about 2 tablespoons each) and roll them into balls.
    • Place them on the prepared baking sheet, leaving 4–5 cm of space between each cookie to allow for spreading. Gently press each ball to slightly flatten.
  7. Bake
    • Bake in the preheated oven for 12–15 minutes, or until the edges are lightly golden.
    • The centers may look slightly underdone, but they will set as the cookies cool.
  8. Cool and Serve
    • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.
    • Transfer to a wire rack to cool completely before serving.
