Peanut Butter Balls Recipe
Yields approximately 100 pieces
Ingredients
For the Peanut Butter Filling:
- 1 ½ cups (18 oz.) creamy peanut butter
- 1 stick (½ cup) unsalted butter, softened to room temperature
- 1 tablespoon vanilla extract
- 1 box (3 ½ cups) powdered sugar
For the Chocolate Coating:
- 12 oz. semisweet chocolate chips (dark chocolate preferred for a richer taste)
- 2 tablespoons solid Crisco (or substitute with coconut oil for a healthier version)
Optional Toppings:
- Sprinkles
- Powdered sugar
- Drizzle of white chocolate
Instructions
- Prepare the Peanut Butter Filling:
- In a large mixing bowl, combine the peanut butter, softened butter, and vanilla extract.
- Gradually add the powdered sugar, mixing thoroughly until the mixture is firm and holds its shape.
Tip: Use clean hands to knead the mixture for a smoother consistency.
- Shape the Balls:
- Scoop small portions (about 1 tablespoon) of the mixture and roll them into smooth, round balls using your hands.
- Place the balls onto waxed paper-lined baking sheets, leaving a little space between each one.
- Chill the Peanut Butter Balls:
- Transfer the baking sheets to the refrigerator and chill for at least 1 hour, or until the balls are firm to the touch.
- Make the Chocolate Coating:
- In a double boiler or a heatproof bowl set over a pot of simmering water, melt the chocolate chips and Crisco (or coconut oil). Stir until the mixture is smooth and glossy.
Tip: Be patient; melting over low heat prevents the chocolate from burning.
- Dip the Balls:
- Using a fork or a candy-dipping tool, dip each chilled peanut butter ball into the melted chocolate, ensuring it’s fully coated. Let the excess chocolate drip off.
- Place the coated balls back onto the waxed paper-lined baking sheets.
- Decorate (Optional):
- Before the chocolate hardens, sprinkle with festive sprinkles, powdered sugar, or drizzle with melted white chocolate for a decorative touch.
- Set the Coating:
- Return the chocolate-coated balls to the refrigerator and chill until the chocolate is firm, about 1 hour.
- Serve and Enjoy:
- Serve the peanut butter balls chilled or at room temperature. Store any leftovers in an airtight container in the fridge for up to 2 weeks or freeze for longer storage.
