Cheesecake Fudge

A creamy and decadent fudge layered with graham crackers for that classic cheesecake taste in every bite!


Ingredients:

  • 9 graham cracker squares (more as needed to fit your pan)
  • 3 cups white chocolate chips
  • 1 cup sweetened condensed milk
  • 1 tablespoon butter
  • Pinch of kosher salt
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups marshmallow Fluff
  • 1 (3.4-oz) package instant cheesecake pudding mix

Instructions:

1. Prepare the Pan:

  • Line an 8×8″ or 9×9″ square baking pan with parchment paper, leaving an overhang for easy removal.
  • Lightly grease the parchment paper with cooking spray.
  • Arrange graham cracker squares at the bottom of the pan to fully cover it, trimming crackers if needed to fit.

2. Melt the Base:

  • In a medium saucepan over medium heat, combine the white chocolate chips, sweetened condensed milk, butter, vanilla extract, and a pinch of kosher salt.
  • Stir constantly until the mixture is smooth and fully melted.

3. Add Cheesecake Flavor:

  • Lower the heat to medium-low. Stir in the cheesecake pudding mix and continue mixing until fully dissolved and incorporated.

4. Add Marshmallow Fluff:

  • Turn off the heat and gently fold in the marshmallow Fluff. Stir until fully melted and combined into a creamy mixture.

5. Assemble the Fudge:

  • Pour the melted fudge mixture evenly over the graham crackers in the prepared pan. Use a spatula to smooth the surface.

6. Chill and Set:

  • Refrigerate the fudge for at least 3 hours, or until completely set and firm.

7. Slice and Serve:

  • Lift the fudge out of the pan using the parchment paper overhang. Cut into small squares or rectangles.

Tips:

  • Storage: Store in an airtight container in the refrigerator for up to 1 week.
  • Optional Toppings: Garnish the top with crushed graham crackers or white chocolate drizzle before chilling for extra texture and flavor.
  • Serving Size: This rich fudge is best served in small pieces.

Yield:

Approximately 25–36 small squares, depending on how you slice them.
