Coconut Biscuits Recipe
Ingredients (Yields about 40-50 biscuits, depending on size)
- 4 cups all-purpose flour
- 1 cup butter (softened)
- 1 cup sugar
- 2 tablespoons custard powder or cornstarch
- 1 teaspoon baking powder
- 2 cups desiccated coconut
- 2 teaspoons vanilla essence
- 2 eggs
Instructions
1. Preheat the Oven
- Preheat your oven to 350°F (180°C).
- Line baking trays with parchment paper or lightly grease them.
2. Cream Butter and Sugar
- In a large mixing bowl, cream together the butter and sugar using a hand or stand mixer until light and fluffy. This should take about 2-3 minutes.
3. Add Eggs and Vanilla
- Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next.
- Stir in the vanilla essence.
4. Mix in Dry Ingredients
- Sift together the flour, custard powder (or cornstarch), and baking powder in a separate bowl.
- Gradually add the dry ingredients to the butter mixture, stirring until combined.
- Fold in the desiccated coconut to form a soft dough.
5. Shape the Biscuits
- Roll small portions of dough into balls, about the size of a walnut. Flatten slightly with your palm or the back of a fork for a decorative pattern.
- Place the biscuits on the prepared baking trays, leaving about 1 inch between each biscuit.
6. Bake
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and let the biscuits cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
Tips for Success
- Butter Texture: Ensure the butter is softened (room temperature) for easy creaming with the sugar.
- Customize Flavor: Add a pinch of cinnamon or nutmeg for a warm twist, or sprinkle extra coconut on top before baking.
- Storage: Store the biscuits in an airtight container for up to 1 week.
