Ingredients

For the Custard:

  • 1 egg yolk
  • 270 ml (1 cup + 1 tablespoon) milk
  • 30 g (2.5 tablespoons) all-purpose flour
  • 25 g (2.5 tablespoons) cornstarch
  • 8 g (1 teaspoon) vanilla sugar
  • 60 g (4 tablespoons) sugar

For the Dough:

  • 2 eggs
  • A pinch of salt
  • 110 g (1/2 cup + 1 tablespoon) sugar
  • 100 ml (1/2 cup) vegetable oil
  • 110 ml (1/2 cup + 2 tablespoons) hot milk
  • 280 g (1.75 cups) all-purpose flour
  • 16 g (2 teaspoons) baking powder
  • 8 g (1 teaspoon) vanilla sugar
  • 1 apple, peeled and thinly sliced
  • 50 g raisins

For the Egg Wash:

  • 1 egg yolk
  • 2 tablespoons milk

Equipment:

  • 22 cm (8.5-inch) baking mold

Instructions

1. Prepare the Custard:

  1. In a medium saucepan, whisk together the egg yolk, milk, flour, cornstarch, vanilla sugar, and sugar until smooth and lump-free.
  2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens into a creamy custard.
  3. Remove from heat, cover with plastic wrap (placing the wrap directly on the custard surface to prevent a skin from forming), and let it cool to room temperature.

2. Make the Dough:

  1. Mix Wet Ingredients:
    • In a large mixing bowl, whisk together the eggs, salt, and sugar until frothy.
    • Gradually add the vegetable oil and continue whisking until combined.
    • Slowly add the hot milk while whisking to incorporate.
  2. Add Dry Ingredients:
    • Sift together the flour, baking powder, and vanilla sugar, then add to the wet mixture. Stir until you have a smooth, thick batter.

3. Assemble the Pie:

  1. Preheat your oven to 180°C (356°F) and grease or line your 22 cm baking mold.
  2. Pour half of the dough into the prepared mold, spreading it evenly.
  3. Spoon the cooled custard over the dough layer, spreading gently without mixing the layers.
  4. Arrange the apple slices and raisins evenly over the custard.
  5. Cover with the remaining dough, spreading it carefully to seal the top layer.

4. Egg Wash and Bake:

  1. In a small bowl, mix the egg yolk with 2 tablespoons of milk.
  2. Brush the mixture evenly over the top of the pie to give it a golden finish.
  3. Bake in the preheated oven for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the dough comes out clean.

5. Cool and Serve:

  1. Let the pie cool in the mold for about 10 minutes, then transfer to a wire rack to cool completely.
  2. Slice and serve as is, or with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.

Tips for Success

  • Apple Choice: Use tart apples like Granny Smith for a nice contrast to the sweet custard.
  • Raisin Prep: Soak raisins in warm water or rum for 10 minutes before using for extra plumpness and flavor.
  • Custard Consistency: Ensure the custard is completely cooled before layering to prevent it from mixing with the dough.

This recipe offers the perfect balance of creamy, fruity, and cakey textures—ideal for cozy family gatherings or festive celebrations!
