4 bone-in pork chops
2 tablespoons brown sugar
2 tablespoons soy sauce
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
2 teaspoons minced garlic
1 tablespoon olive oil
Step-by-Step Instructions
Step 1: Make the Glaze
In a medium mixing bowl, combine the brown sugar, soy sauce, Dijon mustard, Worcestershire sauce, and minced garlic. Whisk everything together thoroughly until the brown sugar is fully dissolved and the mixture forms a smooth sauce.
Step 2: Prepare the Meat
Pat the bone-in pork chops completely dry with paper towels to ensure a perfect sear. Lightly season both sides of the meat with a pinch of salt and black pepper.
Step 3: Sear the Chops
Add the olive oil to a large skillet or cast-iron pan and place it over medium-high heat. Once the pan is hot, add the pork chops. Sear them undisturbed for 4 to 5 minutes until a deep, golden-brown crust forms on the bottom, then flip them over.
Step 4: Add Sauce and Caramelize
Immediately reduce the heat to medium. Pour the prepared brown sugar glaze evenly over the chops in the pan. As the sauce bubbles and starts to thicken, use a spoon to continuously scoop up the glaze and baste it over the top of the pork chops. Cook for another 4 to 5 minutes until the meat is cooked through and the glaze is thick and sticky.
Step 5: Rest and Serve
Remove the pork chops from the pan and let them rest on a plate for 3 to 5 minutes so the juices lock in. Drizzle the remaining warm glaze from the skillet right over the top before serving.
